Tannin: what you are actually feeling

Tannin is the drying, gripping part of wine that you feel around your gums and cheeks. It is easy to confuse with acidity, bitterness or sheer power. Learn the physical sensation first; the vocabulary can come later.

Tannin is easier to feel than to taste

People use the word tannic rather loosely.

Big.

Dry.

Bitter.

Powerful.

Serious.

Those things are not synonyms.

The useful starting point is physical.

Tannin is strongly associated with astringency: the drying, roughening or gripping sensation you feel in your mouth.

The best-supported explanation involves tannins interacting with saliva and the surfaces of the mouth, reducing lubrication and increasing friction.

The science is more complicated than one neat reaction.

Fortunately, recognising tannin is much simpler.

Your best clue is friction

Take a sip.

Swallow or spit.

Then notice what happens around your gums, tongue and the inside of your cheeks.

Do they feel less slippery?

Slightly dry?

Gripped?

Does the sensation build for a moment after the wine has gone?

That is the territory you are trying to notice.

A useful contrast is acidity.

Acidity tends to make your mouth water.

Tannin tends to make it feel drier, rougher or more gripped.

A real wine can do both at once.

Bitterness is different again.

Bitterness is a taste.

Astringency is mostly something you feel.

A wine can have both.

Where tannin comes from

In red wine, most tannin begins with the grape.

Skins and seeds are the main sources.

Stems can contribute when they are included in fermentation.

Oak can contribute a different family of tannins as well.

But the grape does not hand the winemaker a finished tannin profile.

Extraction changes during fermentation and maceration.

Skin tannins tend to come out more readily; seed extraction can continue later.

Temperature, alcohol, berry condition, cap management, pressing and time all alter what ends up in the wine.

So “this grape has tannin” is only the beginning of the story.

And tannin is not exclusive to red wine.

A white wine fermented on its skins can carry obvious tannic grip too.

The key variable: how much grip, and what kind?

Low, medium or high tannin is useful.

It is not enough.

Two wines can both feel clearly tannic and still feel very different.

One might seem fine and polished.

Another coarse and drying.

One might feel integrated into the fruit and acidity.

Another might stick out.

Wine professionals use a huge vocabulary here: silky, firm, grainy, ripe, hard, polished, green, fine.

Do not worry about mastering it immediately.

Even experts do not use all of these words consistently.

Start with four simpler questions:

  1. How strong is the grip?
  2. Does it feel fine or rough?
  3. Does it sit comfortably with the rest of the wine?
  4. How long does it remain?

That is already useful information.

What changes tannin?

Grape and ripeness

Different grapes begin with different phenolic material.

Ripeness and berry condition also affect what is available to extract.

But a grape variety is not a fixed tannin setting.

Winemaking

The winemaker can change how much material is extracted and when.

Skin contact, fermentation temperature, cap management, pressing and maceration time all matter.

Longer contact can increase extraction, particularly from seeds, but there is no simple rule that more time always produces a better or even more tannic wine.

The rest of the wine

Tannin does not act alone.

Acidity, alcohol, sugar, pigments, polysaccharides and other parts of the wine can change how astringency feels.

That is why a laboratory tannin number cannot tell you exactly what the wine will feel like in your mouth.

Time

Tannins keep changing after fermentation and during bottle age.

That can change a wine’s astringency and texture.

But age is not an automatic softening button.

Nor is softer automatically better.

Time changes the wine.

It does not guarantee an upgrade.

What people often misunderstand

Tannic does not mean dry

A tannic wine can feel drying.

That is not the same thing as a wine being dry in the sugar sense.

Tannin is not acidity

Both can make a wine feel firm.

Acidity is more closely associated with sourness and salivation.

Tannin gives the more drying, gripping sensation.

Tannin is not bitterness

They can appear together.

They are not the same sensation.

More tannin does not mean better

Tannin can give a red wine structure and persistence.

Too little, too much or simply the wrong balance can all be unhelpful depending on the wine.

Quantity is not a quality score.

Colour is not a tannin meter

A dark wine is not automatically the most tannic wine in the room.

Colour and tannin are different parts of wine structure.

Smooth does not mean tannin-free

Tannin can feel polished, soft or velvety and still be very much present.

Try this

Taste two contrasting reds side by side.

A youthful, structured Cabernet Sauvignon and a fresh, lighter Gamay are useful places to start.

For the first pass, ignore the aromas.

Take a sip of each and concentrate on what happens after you swallow or spit.

Which one dries your gums more?

Which one grips the inside of your cheeks?

Does the grip feel fine, rough, soft or forceful?

How long does it stay?

Then go back and notice the acidity, fruit and weight around it.

Do not ask which wine is better.

Ask what the tannin is doing.

That is the skill.

Worth knowing

Even professional tannin language is less fixed than it sounds.

Recent research with wine experts found a large vocabulary but a relatively small shared core.

Texture, intensity and maturity were among the most useful organising ideas.

So if “silky”, “fine-grained” and “polished” still feel vague, that is not a failure.

Start with the physical sensation.

The finer vocabulary can earn its place later.
